Then you have black grape varieties like Pinot Noir, Merlot, Syrah or Mourv\u00e8dre for reds.<\/span><\/span> <span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<div>\n<p class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">There are three distinctive groups of vine species: American, Asian and Eurasian; the varieties mentioned above belong to the latter.\u00a0<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<div>\n<h3>American group<\/h3>\n<p class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">The varieties in the American group play an essential role in what we call <b>grafting<\/b>. More specifically, our Chardonnay, Syrah and other Eurasian varieties are in fact grafted onto American vine stock. But why so? The reason for this is that while these US varieties do not produce interesting-tasting wines, they have the great advantage of being resistant to Phylloxera, a pest that decimated numerous wine regions in the 19th century and which is unfortunately still a problem today. Today, these grafts allow us to have healthy vines.\u00a0<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<h3>Asian group<\/h3>\n<div>\n<p class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">As for the Asian vine species, we have not needed to use them to date.<\/span><\/span><span class=\"normaltextrun\"><sup><span lang=\"EN-GB\">\u00a0<\/span><\/sup><\/span><span class=\"normaltextrun\"><span lang=\"EN-GB\">The Eurasian species of vine goes by the name\u202fVitis\u00a0vinifiera and its varieties include those mentioned previously. Interestingly, our Chardonnay and Sauvignon varieties are grown in more than 35 countries.\u00a0You can therefore enjoy Chardonnay from Chablis, Chardonnay from Meursault or even South African Chardonnay !<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/section><section class=\"l-section wpb_row height_large\"><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"g-cols wpb_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><div>\n<h2 class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">Where do the flavours and textures in wine come from?<\/span><\/span><span class=\"normaltextrun\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/h2>\n<\/div>\n<div>\n<p class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">How can you describe a wine? How do put a taste into words? The texture of a wine is one of the key aspects. To understand it, it is important to know how wine is made.\u00a0<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<h3 class=\"paragraph\">The Alcoholic fermentation<\/h3>\n<\/div>\n<div>\n<p class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">Let\u2019s go back to the start of the winemaking process and to alcoholic fermentation. What is <b>alcoholic fermentation<\/b>? It is quite simply the transformation of the grapes\u2019 naturally occurring sugars into alcohol, thanks to the action of yeast.\u00a0If you transform all of the sugar, the wine produced will be dry. However, if you only transform some of the naturally occurring sugar, the wine will be sweet.\u00a0<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<\/div>\n<div>\n<p class=\"paragraph\"><span class=\"normaltextrun\"><span lang=\"EN-GB\">We therefore refer to white wines as extra-dry, dry, off-dry, medium-sweet, sweet or lusciously sweet.\u00a0<\/span><\/span><span class=\"normaltextrun\"><b><span lang=\"EN-GB\">Sugar and alcohol<\/span><\/b><\/span><span class=\"normaltextrun\"><span lang=\"EN-GB\">\u00a0are two of the things that will make one particular wine different from another.\u00a0<\/span><\/span><span class=\"eop\"><span lang=\"EN-GB\">\u00a0<\/span><\/span><\/p>\n<\/div>\n<\/div><\/div><\/div><\/div><\/div><\/div><div class=\"g-cols wpb_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"w-image align_none\"><div class=\"w-image-h\"><img decoding=\"async\" src=\"https:\/\/www.d-vine.com\/wp-content\/uploads\/aron-kovacs-b77iq2G9BKE-unsplash-2.jpg\" class=\"attachment-full size-full\" alt=\"c\u00e9pages 2\" loading=\"lazy\" \/><\/div><\/div><\/div><\/div><\/div><\/div><div class=\"g-cols wpb_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h3>The importance of the terroir<\/h3>\n<p>However, texture can also be the result of differences in <strong>terroir<\/strong>.\u00a0For example, Burgundy whites which are all made from the same variety \u2013 that is Chardonnay \u2013 can be very different. We can thus see that the soil, the exposure and the topography of the vineyard all play a role. A Chablis with a strong limestone imprint will be very different from the wines of Meursault or Chassagne\u00a0Montrachet a little further south, which have more body and creaminess but which are still completely dry.<\/p>\n<p>For red wine, the focus isn\u2019t on sugar but on <strong>tannins<\/strong> instead. What are tannins? They are an organic substance belonging to the polyphenol family, which gives wine an astringent or mouth-coating character to a varying degree.
