A great deal of my family work in the restaurant trade, and so it has been a passion for me since the age of 11. I have always gone to brasseries and caf\u00e9s and am <strong>a self-taught restaurateur.<\/strong><\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"vc_col-sm-6 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"w-image align_none\"><div class=\"w-image-h\"><img decoding=\"async\" width=\"300\" height=\"400\" src=\"https:\/\/www.d-vine.com\/wp-content\/uploads\/Image-d\u2019iOS.jpg\" class=\"attachment-us_600_400_crop size-us_600_400_crop\" alt=\"\" loading=\"lazy\" \/><\/div><\/div><\/div><\/div><\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>What is your main daily challenge?<\/h4>\n<p>Maintaining a top-class level of service and ensuring the continuity of the business which has existed for 18 years.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><blockquote>\n<p>Our goal is to do a great job and to surprise customers.<\/p>\n<\/blockquote>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>Could you describe your restaurant to us?<\/h4>\n<p>La Violette is certified for <strong>quality by the Coll\u00e8ge Culinaire de France<\/strong> (French Culinary College). I ran a family-owned brasserie just next door for five years and then I felt that it was time to spread my wings, with an excellent opportunity for a juxtaposed acquisition. The aim was to have two very different areas: a brasserie on one side and an up-scale restaurant on the other. The long existence of our establishments is due in particular to the development of the district, thanks to the businesses which have headquarters nearby and who have appreciated having access to quality cuisine.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>How would you describe the cuisine at la violette?<\/h4>\n<p>We are a quality restaurant where the cuisine is prepared with <strong>fresh, locally sourced produce<\/strong>. Our goal is to do a great job and to surprise customers with our three \u2018surprise\u2019 set menus (with three, four or five courses). This allows us flexibility in terms of our everyday purchasing and to <strong>work with produce that is in season.<\/strong><\/p>\n<\/div><\/div><div class=\"w-image align_none\"><div class=\"w-image-h\"><img decoding=\"async\" width=\"2500\" height=\"1666\" src=\"https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3.jpg\" class=\"attachment-full size-full\" alt=\"Restaurant La Violette\" loading=\"lazy\" srcset=\"https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3.jpg 2500w, https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3-1536x1024.jpg 1536w, https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3-2048x1365.jpg 2048w, https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3-600x400.jpg 600w, https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3-1500x1000.jpg 1500w, https:\/\/www.d-vine.com\/wp-content\/uploads\/La-violette-3-1000x666.jpg 1000w\" sizes=\"auto, (max-width: 2500px) 100vw, 2500px\" \/><\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>What will be your signature dish for this summer?<\/h4>\n<p>Whole sole prepared <em>meuni\u00e8re<\/em> style, served with a very nice Meursault!<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>Why did you choose the d-vine for your restaurant?\u200b what added-value does it bring?<\/h4>\n<p>Quite simply to give this business client\u00e8le of ours the possibility to <strong>enjoy premium wines, without us having to open expensive bottles<\/strong> and avoiding the day-to-day hassle this brings. In other words, <strong>loss of quality or wasted goods<\/strong>. Given that we cater for 40 guests a day, this system is manageable and at the same time allows us to offer quality by-the-glass wines.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><blockquote>\n<p>The possibility to enjoy premium wines, without us having to open expensive bottles and avoiding the day-to-day hassle this brings.<\/p>\n<\/blockquote>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>How have you managed this unprecedented situation?<\/h4>\n<p>As for everybody, it has been very tricky. We are rather lucky to have had a very good year in 2019. Financially, the business is viable so we have a solid position. The government support has been a welcome help.
