Welcome to the <a href=\"http:\/\/www.restaurant-depart.fr\/accueil.php\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Au D\u00e9part<\/strong><\/a> restaurant, in B\u00e9thune. Today, owner Audrey Buche, who has been a D-Vine client since September 2019, let us into her restaurant.<\/p>\n<\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/section><section class=\"l-section wpb_row height_large\"><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>Can you tell us who you are and how you got here?<\/h4>\n<p>My name is Audrey Buche, I\u2019m 40 years old and I\u2019ve been the owner of the restaurant Au D\u00e9part in B\u00e9thune for 20 years. Like my husband, I\u2019m a fan of good wines, food and cuisine. We also have a hotel which we have had for 10 years, a bar and, since recently, a brasserie. I wanted to be a perfumer when I was young. When we opened our restaurant, I was instantly gobsmacked by the wines. I belong to a wine tasting club and I read a great deal of wine reviews. I\u2019m not interested in the labels;<strong> I like to know the winery\u2019s story.<\/strong> It upsets me when I hear guests saying that a wine is poor. Behind every wine, there is a producer!<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>What is your main daily challenge?<\/h4>\n<p>Surprising our customers and always bringing a sparkle to their life! We do everything we can to ensure consistency, <strong>to be constant, as we have a clientele of regulars<\/strong>, but who still like to be surprised. The idea is to not allow things to become too routine. We change the d\u00e9cor regularly, too!<\/p>\n<\/div><\/div><div class=\"w-image align_none\"><div class=\"w-image-h\"><img decoding=\"async\" width=\"1024\" height=\"768\" src=\"https:\/\/www.d-vine.com\/wp-content\/uploads\/Au-d\u00e9part-2.jpg\" class=\"attachment-full size-full\" alt=\"\" loading=\"lazy\" srcset=\"https:\/\/www.d-vine.com\/wp-content\/uploads\/Au-d\u00e9part-2.jpg 1024w, https:\/\/www.d-vine.com\/wp-content\/uploads\/Au-d\u00e9part-2-1000x750.jpg 1000w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>How would you describe your cuisine?<\/h4>\n<p><strong>Creative, inventive and in-season<\/strong>. My husband&#8217;s cuisine is always very balanced in flavour and texture. He is never content with just one accompaniment. It\u2019s a generous yet gourmet cuisine! And it is deliciously flavoured. He likes using the cooking juices and I love that! I adore his cuisine because I can match it with some great wines.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>What will be your signature dish for this summer?<\/h4>\n<p>Marinated langoustines, mixed varieties of tomato with cream and olive oil from Alexis Munoz.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><blockquote>\n<p>It has really been an asset for us. The D-Vine brings an extra experience to the service.<\/p>\n<\/blockquote>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>Why did you choose the D-Vine for your restaurant?\u200b<\/h4>\n<p>Customers are surprised and stimulated by the D-Vine. It allows us to be profitable while remaining affordable and <strong>offering quality of service<\/strong>. It has really been an asset for us. The D-Vine brings an extra experience to the service. Even people who don\u2019t order a glass are intrigued. Sometimes, it encourages them to come back quickly to try it, and that includes people who were initially sceptical about the device! It has even allowed me to convert people who never used to order by-the-glass wines at restaurants due to quality issues. It\u2019s a toy for me. I have great fun with it!<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><blockquote>\n<p>When lockdown is over, we are going to offer deliveries in glass jars with flacons.<\/p>\n<\/blockquote>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>How have you managed this unprecedented situation?<\/h4>\n<p>During lockdown, we took care of the hotel and various works in our establishments. We also took advantage of the time to get on with plans for the future.<\/p>\n<\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>How do see the re-opening? Have you planned to adapt your offering?<\/h4>\n<p>When lockdown is over, we are going to <strong>offer deliveries in glass jars with flacons.<\/strong> And for our customers\u2019 return, we are lucky, the restaurant is big, so we will be able to space them out.<\/p>\n<\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/section><section class=\"l-section wpb_row height_large\"><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-12 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"w-separator size_small with_line width_default thick_1 style_solid color_border align_center\"><div class=\"w-separator-h\"><\/div><\/div><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h2>To learn more<\/h2>\n<p>The Mercure Metz Centre hotel, with its contemporary d\u00e9cor inspired by the city\u2019s cathedral, boasts a superb location in the centre of town. The hotel welcomes leisure and business travellers.
