Under the Best Western group, the Cité Royale Hotel and Villa Saint-Antoine are two upscale establishments located in France. At their helm, General Manager Christophe Vasseur testifies to his experience with dVine.
Christophe Vasseur, an exceptional journey
For over 30 years, Christophe Vasseur has been pursuing his career in the restaurant industry. 13 years ago, he was entrusted with the kitchens of Villa Saint-Antoine in Clisson. Villa Saint-Antoine is a hotel-restaurant with 45 rooms. The restaurant can accommodate 140 guests and offers a magnificent view of the Château, all accompanied by a spa-relaxation area and a pool.
When the opportunity arises to open a second establishment in Loches, the Hôtel de La cité Royale, he becomes the General Manager of both establishments.
The cuisine offered at Villa Saint-Antoine is bistronomic with a focus on vegetables. All the ingredients used are fresh and primarily sourced locally. Thanks to this culinary expertise and commitment, Christophe obtained the title of “maître restaurateur” in 2021.
The partnership with dVine
Before committing to dVine Pro, 6 months ago, Christophe had already experienced and tested the very first version of the concept several years ago. Deemed too slow, he had then decided not to pursue it. However, in 2022, dVine Pro and its performance managed to convince Christophe Vasseur the second time. An offer he deemed more suitable for the restaurateur, easier to use, and above all, faster.
Moreover, the addition of the tablet and access to technical sheets makes the learning and sale of wines more enjoyable. The use of dVine and therefore the sale of wine by the glass are then simplified.
Premium wines and waste reduction
dVine has allowed both establishments to enhance their wine list with fine wines served by the glass and to serve them under the best possible conditions, temperature, and aeration. The tasting experience is also elevated when the wines are offered in harmony with the dishes served by the establishment.
Beyond the service conditions, the wine by the glass offering provided by the dVine system aligns with the ecological values of Villa Saint-Antoine and Hôtel Cité Royale. Indeed, both hotel-restaurants have been awarded the Green Key label, a recognition given in Europe to establishments that uphold ecological values. Certain criteria such as waste management and responsible consumption are taken into consideration. As a result, the wine flacons enable better inventory management, limiting opened bottles and reducing the risk of loss associated with opened bottles. Less waste and a more responsible consumption.
The favorite wine of Villa Saint-Antoine and Hôtel Cité Royale
The Saint-Julien Grand Cru Classé from Château Beychevelle remains a must-have in Christophe Vasseur’s eyes. However, he confides that he was pleasantly surprised by a foreign wine. Indeed, the WO Hemel-en-Aarde Valley, Walker Bay from South Africa’s Bouchard Finlayson estate has won over our Master Restaurateur with its notes of strawberry and raspberry.
